One of the perks of rural living is that your neighbors often pass off the extra bounty they are blessed with so that nothing goes to waste. I went to a Team Meeting on Monday and came back with an unexpected blessing- these beautiful green eggs! (Thanks guys!) That got me to thinking, most people eat eggs (as an ovo-lacto vegetarian eggs are one of the few animal proteins that I will eat, although sparingly) but most people don’t realize the benefits of MODERATE egg consumption, and what a marvel of design and engineering eggs really are.  Here are some amazing facts from the American Egg Board’s website:www.incredibleegg.org *Over 200 breeds of chickens have been developed worldwide, but only a few are economically important as egg producers. * Eggs are full of vitamins and nutrients but only contain- 70 calories each!* Protein found in eggs is of the highest quality protein and at 15 cents each- it is also an economical source of this vital nutrient.*Egg yolks are an excellent source of choline, an essential nutrient that contributes to fetal brain development and helps prevent birth defects.
